It matters in a few ways. Instances can defederate from each other, so you have to keep that on mind when choosing where to sign up.
Also when posting something, you have to think about the rules of the server you’re posting on and your home server. Even if the server you’re posting on allows it, your home server may not like you posting it.

Honesty it is unlikely to be an issue, you could just sign up on a different instance at the time it becomes an issue (if ever).
